That typically means planning rotas, leading and training the team, managing stock, ordering and waste, keeping standards of presentation, cleanliness and health and safety, handling customer issues, and working towards sales and cost targets. Managers often work a mix of opening, closing and weekend shifts and may act as key holders. Helpful experience includes supervising a team in a busy shop or food outlet, being comfortable with figures and reports, and calm problem-solving. Where food is sold, managers are typically expected to know the business's food safety system, which Irish law requires to be based on HACCP principles.
