The MerryTree is a family-run restaurant as part of their Rathwood retail enterprise,
located just outside of Tullow on the border of Carlow and Wicklow. The restaurant
opened in the mid 1990's and has grown to be an extremely popular choice in South Leinster.
Serving breakfast and lunch until late afternoon, MerryTree fuses traditional flavours
with the best of world foods, emphasising organic and local produce. Post-Covid, the
restaurant will seat circa 160 people, and there is also a private dining room that in
normal times would seat up to 70 people. They also provide a home catering menu
and takeaway options.
About the job
The MerryTree won the RAI award for ‘Best Casual Dining’ in Carlow for 2017. They’d like to get back to winning awards again and would welcome your ambition and ideas to develop the menu and restaurant. Their ethos is to champion local food producers by using the finest quality ingredients, sourced from within Leinster, to create wholesome, contemporary dishes. They want you to continue developing new, quality sources, while negotiating competitive prices as you’re responsible for gross margin and stock control.
Initially you’ll report into the Food and Beverage Manager with a dotted line to the MD. The initial focus will be on the kitchen management, the menu and the suppliers, as well as customer expectations. However, the F&B Manager will be taking maternity leave in the coming months so you will then oversee the front of house staff operations in her absence. The kitchen is large, hosting a senior chef, a sous chef and five CDPs with ample room. The hygiene is the highest standard and fully HACCP compliant.
Of course, full compliance with Covid-19 guidelines will be a major focus in the current climate, including staff safety, kitchen operations, opening and closing duties, the set-up of the front of house seating area, maintaining a clean and organised environment and customer interaction.
What you’ll need
Proven, significant experience in a senior catering management level role, with a deep understanding of front and back of house operations is the only way you’ll be able to succeed in this role.

Working hours are 9 am to 6 pm on a five-day week, so no late nights! Rathwood have extra facilities for families such as a kiddie train, playground and deer park and run lots of yearly events, so the restaurant is very busy during these times and the holidays, but quieter midweek. In the calmer periods, you can avail of full weekends off, with the expectation of working the entire weekend when required.
The Merrytree is only an hour from Dublin so could suit commuters or city dwellers looking for a quieter and more affordable lifestyle. However, we welcome applications from the whole country. Our location has a lot to offer with the market town of Tullow a six-minute drive away and some of Ireland’s best scenery on our doorstep for drives, walks and cycling.
